Dr.Zelal Polat attended Ege University in 1995 (İzmir) and graduated with a BSc diploma in Food Engineering in 1999. She obtained her degree of Master of Science in Biotechnology and Bioengineering from Izmir Institute of Technology in 2002. In her master thesis, she studied valorization of by-products in dairy industry. In September 2002, she was appointed as a PhD student within the project about determination and recovery methods of high value added products in food industry, in Chemical Engineering Department of Izmir Institute of Technology. She was allocated in several courses as teaching assistant during her master and Ph.D education. Dr Polat participated in a project at IEM for 6 months, (Montpellier, France) about removal of bitterness in fruit juices. She worked for Sustainability Academy (Istanbul) after her Ph.D graduation for a while and joined the Gastronomy and Culinary Arts Department(Alanya, 2014) as Assistant Professor and worked for 4.5 years. Dr.Zelal Polat is the lecturer of “Food and Sustainability” course of 2021-2022 Fall Semester, (Gastronomy and Culinary Arts, Antalya Bilim University)
