The article entitled “Quality Characteristics of Chicken Meat Marinated With Antioxidant-Rich Fruit Juices and Powders,” co-authored by Research Assistant Batuhan GÜRS from the Department of Gastronomy and Culinary Arts, Faculty of Tourism, Antalya Bilim University, and Assistant Professor Elif SAVAŞ, has been published in the internationally recognized Q2-ranked journal Journal of Food Measurement and Characterization.

The study examines the effects of antioxidant-rich fruit juices and powders on chicken meat quality, highlighting the potential of natural marination methods to improve food quality.
